Had a week where every cup of coffee tasted like burnt rubber

I messed up my morning routine last Tuesday after I bought a bag of beans from a new roaster in Portland. Ground them the same way I always do with my V60, but the brew came out dark and bitter no matter what I tried. Turns out I was using water that was too hot, around 210 degrees instead of the 200 I normally aim for. Dialed it back to 200 and it still tasted off, so I finally realized the beans were just over-roasted. Has anyone else bought a bag that looked good but turned out to be a total dud?

Wait wait, 210 degrees? That sounds insane to me, I didn't even know people went that hot for coffee. Maybe it's just my cheapo kettle but I'd be scared to try that.

Man, @the_lucas, you and me both. My first attempt at 210 was basically me staring at my kettle like it was a ticking bomb. Ended up scorching the beans so bad my coffee tasted like a campfire had a fight with a rubber tire. But now I get why people do it. It's like the difference between a lukewarm shower and a proper scalding one - one wakes you up, the other just makes you sad. Just don't try it with a cheap kettle that can barely boil water without screaming.
