Still thinking about what the lady at the farmers market told me about cold brew

I was at the Beaverton farmers market last Saturday buying beans from a small roaster, and the woman next to me asked what I was brewing with. She said she only uses a French press because it keeps more of the natural oils, and she swore drip machines strip the flavor away. I always figured a pour-over was the best for clarity, but she made a point about body and mouthfeel that stuck with me. Now I'm torn between chasing that clean taste or going for the fuller texture she described. Has anyone else changed their whole brew method based on one random conversation like that?

My buddy Jeff had almost the exact same thing happen to him. He was a die-hard pour-over guy for years, chased that clarity like it was a hobby. Then some old timer at a bike shop told him the Aeropress was the only way to get both the clean taste and the oily body without the grit. Jeff bought one that afternoon and I swear he hasn't touched his V60 since. It's funny how one random person can just completely mess up your whole coffee routine.
