My 14th try at a sourdough loaf finally worked, and it was stale by supper
I kept killing the starter for about a year, then in June I switched to a cheap digital scale and the 14th loaf actually rose. But my family ate half of it while it was still hot, so by 6 PM it was tough as a boot. Has anyone else hit a baking milestone late in the game only to realize the real problem was timing, not technique?

Boot tough" is still better than my sourdough brick that doubled as a doorstop for a month, so congrats on leveling up.
