My oven died in the middle of a 50-loaf bake last Saturday
I was three hours into a weekend bake for a farmers market when the oven just clicked off and wouldn't come back on. Temperature dropped from 425 to 200 in about ten minutes. I had to load all the dough into my car and drive to a friend's bakery across town to finish baking. She let me use her deck oven for free, but I lost two batches to overproofing. Ended up with 38 loaves instead of 50 and had to refund a few people. Has anyone else had to scramble like that with a big batch of dough?

You should have planned better. Backup equipment is basic pro prep.

Did you ever have that gig where you showed up with a spare cable and it was the totally wrong kind? I once brought a backup mic that used a different connector than the venue's board, so it was useless. Sometimes even planning ahead doesn't cover every weird curveball, right?
