The week I made 42 pounds of pulled pork for a block party that got rained out
Back in 2019 I volunteered to smoke a whole hog for our street's annual cookout. Spent 18 hours babysitting my offset smoker through a thunderstorm, got maybe 3 hours of sleep total. The party got cancelled at noon when the radar showed solid rain until 8pm. I ended up freezing most of it and giving bags to neighbors for months. Has anyone else had a big cooking project go totally sideways like that?

Bro that sucks. Did something similar with 60lbs of brisket for a party that got snowed out.

Wait, am I the only one who actually thinks that's kind of a good problem to have? I mean sure it sucks in the moment but 60 pounds of brisket is like a months worth of meals if you plan it right. Freezer space is definitely a pain but you can just cube it up and use it for breakfast tacos, loaded nachos, or even mix it into mac and cheese and it never gets old. And honestly brisket chili is S tier comfort food so I don't see the downside. I feel like people exaggerate how bad it is because they don't wanna deal with meal prep but once you get into a rhythm it's actually pretty nice. To each their own I guess but I'd take a freezer full of brisket over a freezer full of chicken breasts any day.

Man 60 pounds of brisket is a whole different level of pain. @scott.drew I bet that freezer was packed to the brim for months after. At least with 10 pounds of pork shoulder I only had to figure out like 15 meals worth. You probably had brisket tacos, brisket sandwiches, brisket chili, and brisket everything for like half a year. Did you at least end up vacuum sealing most of it? That much meat going bad would have been a real tragedy.
