Can we talk about how I used to chuck everything into one bowl for cookies?

I used to just dump flour, sugar, eggs all at once and mix until it looked okay. My cookies were always flat or hard as rocks. Then about 6 months ago I started creaming the butter and sugar first for a full 3 minutes, and now they actually puff up right. Has anyone else had a simple tweak like that fix their whole baking game?

Friend of mine used to make brownies that were basically hockey pucks. She was mixing the sugar and eggs together before adding the melted butter, turned out she was deflating everything. Once she waited and mixed the butter and sugar first, then added eggs slow, they came out fudgy every time. Sometimes it's the smallest step order that changes everything.

Wait, but isn't the classic method to cream the butter and sugar together first for most baked goods? That's how you get air into the batter, and for brownies you actually want a denser, fudgier texture, don't you? Mixing the butter in last with the eggs and sugar already together kinda stops you from accidentally over-beating everything, which makes cakes tough. My mom's recipe has you whisk eggs and sugar until thick, then fold in melted butter real gentle, and her brownies come out perfect and chewy every single time. Maybe your friend's mistake was just over-mixing the eggs, not the order itself.
