Can we talk about using parchment paper from a deli counter for cakes?

I was at a little bakery in Portland last weekend picking up a birthday cake for my kid, and I noticed the baker there was using these huge sheets of parchment paper that looked exactly like the kind they use at deli counters for sandwiches. I asked her about it and she said she buys the big rolls from a restaurant supply shop for like $8 each. I tried it at home on Sunday for a batch of chocolate cupcakes and it was a game changer. The sheets are wider so they actually fit across my whole sheet pan without curling up at the edges. Also no more fighting with those little pre-cut squares that never stay flat. Has anyone else grabbed commercial sized parchment instead of the boxed stuff at the grocery store?

Wait hold on, is it really that big of a deal? I get that pre-cut parchment squares can be annoying but you're acting like this baker cracked the Da Vinci code of cupcake making. Those big rolls are like $8 but the box at the store is maybe $3 and lasts me months. Unless you're baking every single weekend the grocery store stuff works just fine.

Yeah but have you actually timed how long that box of pre-cut squares lasts you? A giant roll from a supply shop is gonna be like 5 times as much paper for maybe double the price. Seems like a no-brainer if you bake even once a month. But hey, if you like fighting with curling paper edges, you do you.

YES exactly, "fighting with curling paper edges" is the real struggle nobody talks about. I spent so many years wrestling with rolls that curl up on you at the worst moment, especially when you're in a hurry. Switching to the big sheets from a restaurant supply changed my whole baking life.
