Cream of tartar is not optional no matter what your grandma says

My mom tried to skip it in her angel food cake last Sunday and we ended up with a 2 inch tall dense pancake instead of a fluffy cloud. Has anyone else had relatives insist it's a waste of money only to get wrecked by flat meringue?
