I swore by my stand mixer for years, but my sourdough starter this morning proved me wrong.
My 6-year-old KitchenAid's motor gave out right as I was trying to knead a super high-hydration dough, so I had to finish by hand in my Brooklyn kitchen and the loaf actually turned out better with more control over the feel.

Honestly, that sounds like a lucky break more than a real lesson. A stand mixer is just a tool, and a broken tool doesn't make the job better. Your hands got tired and you got a feel for it this time, but next week when you're busy you'll miss that machine doing the hard work. Consistency is way harder to get by hand every single time, and that motor dying at the worst moment proves you need a reliable one, not that you should ditch it. I'd be looking at the warranty, not swearing off mixers.

My hands still ache just reading that.

Sometimes a broken tool forces you to learn a better way (even if it's just for that one dough).
