Just found out from a baker in my town that letting cookie dough chill overnight isn't just about firmness, it changes the flavor. She said it lets the flour fully hydrate and the sugars dissolve.

Taste the difference myself. Chilling just makes them easier to handle.

Huh, I always thought the flavor change was way overhyped. In my experience, chilling mostly just stops the cookies from spreading too flat in the oven. The texture gets better but I've never noticed a big taste difference, even side by side.
