My aunt in Florida showed me a trick with a kitchen scale that saved my cookies

I was visiting my aunt in Tampa last month and we were making her famous chocolate chip cookies. Mine always spread into one giant flat mess. She watched me scoop dough with a spoon and said, 'Honey, you're guessing. That's why they're all different sizes and bake unevenly.' She pulled out her little digital scale, the OXO one she's had for years, and made me weigh each dough ball to exactly 45 grams. I thought it was overkill, but we baked two trays side by side, one with my guesswork scoops and one with her weighed ones. The difference was crazy. Her tray had perfect, even circles that were soft in the middle. Mine were all over the place, some burnt edges, some raw centers. It was a total win moment. Has anyone else had a simple tool like a scale completely fix a baking fail?

Oh man, this is so true. It's like when you start using a timer for laundry or actually measure your coffee grounds. You just realize how much guesswork you were adding to your day for no reason.
