My aunt told me I was overmixing my banana bread and it took me 30 loaves to believe her

She's been baking for 40 years and just watched me one time. Said I was beating it like I was mad at the batter. I always thought you needed to get it totally smooth. Cut my stirring time in half and now my loafs don't come out dense and gummy. Still catch myself going too long sometimes though. Anyone else get a tip from a family member that felt dumb simple but actually worked great?

Thirty loaves is dedication lol. Glad you finally cracked the code though.

Wait, you were beating it for how long? Tbh I used to mix my banana bread until it looked like cake batter too. My grandma told me the same thing after one look at my loaves. She said to stop when there's still a few streaks of flour visible. Honestly cutting back on mixing made a huge difference for me too.
