My neighbor Carol told me my pie crust was too tough and she was right
She caught me struggling with a lopsided apple pie at our building's potluck in the Oakwood Apartments community room last fall. Carol just flat out said "Your crust is overworked, honey, you're kneading it like bread dough." She showed me right there how to pat it together instead of rolling it smooth. Has anyone else had a random neighbor or stranger actually fix a baking problem on the spot?

Gently patting it together is definitely the way to go, but Carol's advice might have left out one detail. You still need to let the dough rest in the fridge for at least 30 minutes after you pat it, otherwise the gluten will tighten back up and give you that tough crust anyway. I learned that the hard way when I tried her method and ended up with a crust that shrank into a weird little bowl. Funny how one little step makes all the difference between tough and tender.

Did your friend ever figure out the fridge trick too? My buddy tried the same thing and his pie looked like a wadded up napkin coming out of the oven. It's wild how one little tweak saves the whole thing.
