PSA: My sister told me to stop opening the oven to check my biscuits, and she was right after 12 years
When I first started baking around 2009 I opened the oven door every few minutes to watch my biscuits rise, and they always came out flat and pale. My sister finally told me at a Sunday dinner in Ames that I was letting all the heat out and to just trust the timer. I tried it once with a batch of buttermilk biscuits and they actually browned on top for the first time. Now I set the timer and walk away, but I still peek through the glass like a weirdo. Anyone else's family give them one tip that fixed a decade of bad baking?
