Showerthought: I used to just dump my yeast in with the flour.

After a whole batch of cinnamon rolls came out flat as a pancake, I started proofing it in warm water with a pinch of sugar first. That one change made all my breads rise properly. Anyone else have a simple step they used to skip that caused a total fail?

That warm water and sugar step is basically waking the yeast up from a nap before putting it to work.

I mean, it's more like checking if the yeast is still alive.
