Spent $40 on a fancy panettone paper mold and it was a total flop

I bought this expensive silicone paper mold from a bake shop in Portland for $40 thinking it would make my panettone perfect. First bake the dough stuck to the sides so bad I had to cut it out in chunks. I wasted 6 hours of proofing and almost $15 in ingredients on that one. Anyone else tried those pricey molds and regretted it?

Idk maybe it's just me but I think the real trick is using the cheap paper molds and just being careful with the butter. I had that same problem with a silicone one once and it was a nightmare. What worked for me was greasing the paper with soft butter instead of spray oil, and then dusting it with flour like you would a cake pan. Also letting the dough cool a bit before taking it out of the mold helped a lot. For $40 it's rough to learn that lesson but at least now you know the cheap ones are actually better.

Ngl, I fell for one of those fancy silicone molds too and it was a total disaster. The dough just welded itself to the sides no matter how much I greased it, and I ended up with a lumpy mess that looked nothing like panettone. After that I went back to the cheap paper pans from the grocery store and haven't looked back.

Huh, were you using bread flour or all-purpose when it stuck?
