Stop chasing 'artisan' cake flour, just wasted $12 on a bag that did nothing special
I saw all these bakers online raving about this fancy cake flour $12 for a 2 pound bag at my local grocery in Austin. Used it for my vanilla layer cake and it came out exactly the same as when I use regular flour with cornstarch. My batter was dense, cake was dry, and I feel like I got tricked by pretty packaging. Has anyone else fallen for overpriced flour or found one that actually makes a difference?

Oh yeah I got burned by that stuff too. What actually worked for me was just sifting my regular all-purpose flour three times before mixing - it made my cakes way lighter and I saved the $12. Sometimes the simple tricks beat the fancy packaging every time.

Just ask my kids, they'd tell you I've been sifting flour since before it was cool.
