That time my neighbor showed me her great-grandma's pie crust trick

I was over at my neighbor's house last Tuesday helping her fix a leaky hose bib, and she mentioned how her great-grandma always used a fork to crimp the edges instead of fingers. She said the heat from your hands can melt the butter and make the crust tough, so the fork keeps it cold and flaky. Anyone else heard an old trick like that that actually worked better than the modern way?

That fork trick is actually solid. I mean, I once tried making pie crust with my bare hands and ended up with something closer to a hockey puck than a pie. It was so tough my dog wouldn't even sniff it. The fork thing makes sense though, keeps that butter from turning into a greasy mess before it even hits the oven.

Honestly, the fork trick is a lifesaver. Another thing that helps is chilling your flour and bowl for like 15 minutes before you start. Keeps everything cold so the butter stays in little chunks instead of melting into a paste.
