The difference 18 hours makes on a sourdough starter...

I started my first sourdough starter a couple weeks ago and was getting nervous because nothing was happening after 3 days. Left it on the counter for about 18 hours overnight by accident instead of feeding it, and came back to it bubbling like crazy and doubled in size. That long wait between feedings in the early stage really woke the yeast up apparently... has anyone else seen a big change after leaving theirs alone a bit too long?

That bit about the "big change after leaving theirs alone" really hit home. I practically forgot my starter existed for a full day once and it grew so much it pushed the lid off the jar and got dough all over my counter. Guess I learned that neglect can be a good thing in baking, kind of like how I forget to pay my parking tickets and then they just go away. Now I'm scared to feed it on time because it might get mad at me for being too attentive.

Right? Mine did the same thing and then I forgot to feed it again and it just... went to sleep.
