I used to beat my dough like it owed me money because my grandma always said bread needs a good workout. Then last Tuesday I made two loaves side by side, one kneaded for the usual 20 minutes and one just until smooth for maybe 8. The short-knead loaf came out with those big open airy holes I'd been chasing forever, while my usual one was dense as a brick. My neighbor who bakes sourdough professionally saw me struggling and just said 'you're not making pizza dough tough, you're ruining the gluten structure.' Has anyone else had that lightbulb moment where a habit you trusted was actually the fail all along?
