Changed my mind about meal prep Sunday after a brutal Thursday

I used to think Sunday meal prep was a waste of a day off, but last week I had back-to-back meetings from 8 to 6 and was so hungry I ate a granola bar off the floor. That night I spent an hour prepping four lunches for this week and it saved my Tuesday completely.

Ugh the granola bar off the floor is such a mood. I had the exact same switch up after a day where I forgot my lunch and ended up buying a sad overpriced sandwich from the cafeteria that tasted like cardboard. Now I do a quick meal prep every Sunday night, usually just some rice, chicken, and roasted veggies, and it takes me less than an hour. Tuesday was my worst day too until I started doing this, having something ready to grab completely changes how the rest of the week goes. What do you usually make for your prep lunches?

Oh you REALLY hit on something with Tuesday being the worst day, why IS that? I swear by Tuesday my Monday leftovers are gone and I'm staring at a bare fridge like a fool. Your meal prep sounds SOLID though, I started doing the same thing but I switch it up with burrito bowls or pasta salads so I don't get bored by Wednesday. The key for me is having a few different containers ready to grab, then I don't even have to think. Honestly the floor granola bar phase is REAL, we've all been there way too many times.

Actually Tuesday is the most productive day for most people, Monday's usually the rough one since you're shaking off the weekend.
