Oh totally, the "once you cook them right" part is key. I used to mess up dried beans so bad - they'd either be crunchy rocks or sad mush. Then I tried soaking them overnight with a little salt in the water (like, a teaspoon or something) and simmering them low and slow with a bay leaf. That changed everything. The texture is just so much creamier, you know? Especially with black beans for tacos - they hold their shape but melt in your mouth. Never going back to canned now.

Canned beans always tasted metallic to me no matter how much I rinsed them. Dried beans cooked with a ham hock or some smoked paprika turn out rich and silky. Pinto beans for refried beans especially - the texture is just unbeatable. Worth the extra time for sure.
