Made a huge pot of lentil soup for under $5 total

I had a bag of brown lentils, an onion, and some carrots that were getting soft, so I threw them all in a pot with some broth I had frozen. It simmered all afternoon and made enough for six meals, which really helped during a tight money week. What's your favorite way to use up vegetables before they go bad?

That's a great way to make a budget stretch. Just a small note, brown lentils hold their shape well, but if you simmer them all afternoon they can turn to mush. For a firmer texture, maybe try adding them later next time, like an hour before it's done. My favorite use-up trick is a fridge-clearing frittata. Wilted spinach, that last bit of cheese, and a couple of sad cherry tomatoes all get beaten up with some eggs and baked. It feels like a whole new meal.
