My mom told me my chili was too watery and I got defensive at first
She said I was adding too much diced tomato without draining them. I cut back on the liquid and now it actually holds up better on a bun.

Your mom was right though, wasn't she? I learned the same lesson when my "hearty" chili turned into soup after I dumped in a whole can of undrained fire-roasted tomatoes. Now I drain those suckers in a colander first and it's a game changer for chili dogs.

averymartin's point about simmering off the liquid is solid though. If you let it go for a good 20-30 minutes uncovered, that extra moisture evaporates and you get this deep, almost smoky flavor that draining just kills. Stick with the simmer method and save yourself the colander step, your chili dogs will thank you.

Nah, I gotta disagree on draining the tomatoes completely. That liquid from fire-roasted ones has mad flavor, and it thickens up if you let it simmer long enough without a lid. Try cooking off that extra moisture for 20 minutes instead of dumping it, your chili will taste way deeper.
