My neighbor told me to buy a whole chicken instead of just breasts, and she was totally right

She told me this about a month ago, and I was skeptical because a whole bird was $8 at my store. I roasted it for dinner one night, then used the leftover meat for tacos and the bones to make soup stock. I got three full meals for two people from that one chicken, which is way cheaper than buying packs of just breasts. Has anyone else found a cheap cut of meat that stretches like that?

Pork shoulder is the real winner for stretching a budget. A big roast can become pulled pork, then tacos, and finally a soup base. The fat content keeps it from drying out over multiple meals.

Actually, leftover chicken is perfect for a quick fried rice. The key is using cold, day old rice so it doesn't get mushy. Scramble an egg first, then toss in the chopped chicken and any veggies you have. A good splash of soy sauce at the end makes it. It comes together in like 10 minutes and feels like a whole new meal.
