My sister said my $1.50 chili tasted like water, so I tried one weird thing with the spice rack
Two weeks ago my sister came over for dinner and tried my chili that costs about $1.50 a bowl to make. She took one bite and said it tasted like spicy water, which honestly stung because I had been proud of how cheap it was. I was using the same three spices I always used and just dumping them in at the start. She told me to toast the cumin and chili powder in the pot with the onions for about 30 seconds before adding anything wet. I tried it the next batch and the difference was nuts, the same cheap ingredients suddenly tasted like it came from a real kitchen. Now I do that step every single time and I have not gone back. Has anyone else had a family member roast their cooking and end up teaching them something good?
The 30 second toast thing shows up everywhere once you see it. My buddy Dave grills onions dry for a minute before adding oil to his burgers and swears it's a different meal. Small steps like that do more than buying fancier stuff.
