My uncle showed me his 'soup jar' system at his place in Boise

He had a whole shelf of old pasta sauce jars filled with dried beans, lentils, and rice, each labeled with a piece of tape. He told me, 'If you keep these four things, you're never more than an hour from a meal.' He walked me through making a red lentil soup with just an onion, a carrot, and some spices from his cupboard. The whole pot cost him maybe two dollars. It made me rethink how I shop. What other cheap pantry staples are good for a system like that?

Oh that's so smart. I mean, does he have a rule for what spices to keep on hand? That always trips me up.

Remember my friend Sarah tried that. She ended up with like twelve kinds of paprika and no cumin. Total mess.

My kitchen has three identical jars of oregano right now.
