My whole soup game changed after a trip to the local food bank
I went there last fall to help out, and they showed me how to make a huge pot of vegetable soup using whatever they had a lot of that week. We used a whole bag of carrots, some celery, and a giant can of tomatoes. Now I always check what's on sale or about to go bad in my own fridge before I plan a meal. What's your favorite 'use it up' soup recipe?

That idea of saving veggie scraps in the freezer is so smart. I used to just toss carrot tops and onion ends, but now I keep a bag in the freezer for stock. It makes the best base for a simple potato soup with the last few spuds starting to sprout.
