Pro tip: my first attempt at pancakes ended up as black hockey pucks on a camping stove

Last summer at a campsite near Lake George, I tried making pancakes for my family on a cheap propane burner. I thought high heat would cook them faster, but the batter just sat there burning while the middle stayed raw. After three ruined batches, my buddy pointed out I had the flame on full blast instead of medium low. Now I always test the heat with a few drops of water first has anyone else wrecked a breakfast on a tiny camp stove?

Dude did you try flipping them early to see if the heat was even getting through the batter or were you just leaving them there hoping for the best

Flipping too early can mess up the structure if the batter hasn't set. I usually wait until the edges look dry and bubbles pop on the surface before flipping. If the heat's right that takes about 3 minutes on medium. Flipping earlier than that and you just end up with raw batter on the inside and a burnt outside.

Wait until you see the first few bubbles pop and the edges turn matte before flipping every time. The structure needs that time to set so the pancake holds its shape and doesn't deflate when you lift it. If you rush it you just end up with a messy pancake that's either raw or burnt on one side lol.
