Shoutout to the Waffle House cook in Macon who watched me burn 6 waffles in a row at 2am
He finally came over, turned my iron down two notches, and said "it ain't the batter, honey, you're fighting the heat" so now I test my pan with a water drop before anything touches it, what's your go-to check before you commit food to the heat?
Been there with the waffle iron more times than I wanna admit. My worst was trying to rush pancakes on a griddle that was way too hot, ended up with burnt outside and raw middle, my kid still brings it up at dinner. That water drop trick is solid and way cheaper than wrecking a whole batch. My go to is just hovering my hand over the pan for a second, if I gotta yank it back fast its too hot, if I feel nothing its not ready. Takes practice but now I barely burn stuff anymore. Mostly.
