Thought my oven ran hot for 2 years, the real problem was my one baking sheet
Everything I baked on this one sheet pan came out with burnt bottoms no matter what temp I set, so I just started cooking everything 25 degrees lower and dealt with soggy middles. Last Sunday my wife grabbed the pan for cookies and asked why the underside was warped like a taco, and that's when it hit me, the pan was cheap aluminum that bowed and touched the rack, hot spotting one corner. I switched to a flat heavy pan from the restaurant supply store on 9th and my biscuits came out even for the first time since we moved here. Now I'm wondering how many other 'oven problems' were actually gear problems, what's the dumbest thing you blamed your oven for?
