Chasing a runaway lamb shoulder across the parking lot at 6am

Had a whole lamb shoulder slip off the hook and land on the floor right as the customer walked in Tuesday in Austin. I grabbed it, rinsed it under cold water, trimmed the dirty bits, and told them it was a special cut for a discount. Has anyone else ever had to sell a floor drop at a reduced price or do you just eat the loss yourself?

Man, you rinsed a floor lamb shoulder and called it a special cut... that's a whole other level of bold right there. Most folks would have just eaten the cost or made it into stew for the staff, not sold it to a customer. Honestly, I'm kind of impressed you pulled that off, but I'd be lying if I said I wasn't a little grossed out too.
