Dry aged vs wet aged ribeye... no contest after last week

Did a side by side with a 45 day dry aged prime ribeye and a wet aged choice one from the same supplier, the flavor difference was insane. The wet aged one tasted like nothing next to it, anyone else find dry aging totally worth the shrink?

Nah man I gotta respectfully disagree here. I've done this exact test a few times and the wet aged one isn't "nothing" if you know what to look for. Dry aged has that funky nutty thing going on but it also loses a ton of moisture and tenderness in the process. I actually prefer the cleaner beef flavor of wet aged, especially if the supplier is good. It's not about which is "better", it's about what you're in the mood for. Sometimes I want that dry aged punch, sometimes I want the pure beef taste that hits different.

That "cleaner beef flavor" line got me thinking... I used to be team wet aged till last week too, now I'm not so sure.
