Finally broke down and bought a meat grinder after years of fighting my sharp knives

I spent probably 6 hours over two weeks trying to hand chop pork shoulder for sausage, and my wrist was killing me. Kept telling myself I didn't need another piece of equipment cluttering up my shop. But after the third time my knife slipped on some sinew, I ordered a used Hobart off Craigslist for $175. Got it home, cleaned it up, and ground 20 pounds of trim in under 15 minutes flat. Has anyone else waited way too long to get a grinder and then wondered why they suffered so long?

My buddy Jim talked me into buying a LEM grinder three years ago after watching me struggle with a chef's knife and a cutting board for an entire afternoon. I was stubborn about keeping things simple, but the first time I ran a brisket through for burgers I nearly cried at how easy it was. The cleanup takes me maybe 10 minutes now and my wrist hasn't hurt since. I honestly can't believe I spent years hacking away at meat when this thing was sitting there waiting for me.

Feel you on that wrist thing, man. I was the same way with a cleaver for years, just refusing to admit there was a better way. That first time you put a whole chuck through a grinder in like 30 seconds, it's a real moment. Makes you wonder why you were punishing yourself for so long. Glad you finally saw the light, even if Jim had to drag you there kicking and screaming.
