Heads up on cross-contamination with bone dust
I keep seeing guys wipe their boning knife on the same towel they use to pat dry primals. That's how you spread bacteria from the bone dust all over the meat. Just last week I watched a new guy do it 3 times in a row during a lamb breakdown, and I had to stop him.

Oh come on, is this really that big of a deal? I mean yeah sure ideally you don't want bone dust getting everywhere but I've seen guys do this for years and nobody got sick. If you're moving fast during a lamb breakdown and your towel is already got some blood and fat on it anyway, a little bone dust is the least of your worries. The real risk is leaving meat out at room temp for hours or not washing your hands after touching your face. Plus you're probably going to cook that meat to a safe temp anyway right? I think we're overthinking the whole towel thing.
