Hit 300 pounds of trim in a week and it changed my view on waste.
That's the scrap from just our beef section. We started grinding it all for burger instead of tossing it. Anyone else track their trim numbers? What do you do with yours?

Damn, that's a crazy amount. I always figured trim was just waste, but grinding it for burger is actually smart. Makes you realize how much gets thrown out for no reason.

Wonder what the actual weight of that trim is per day. Like, are we talking a few hundred pounds from those 500 steaks, or does it add up to a literal ton by the end of the week?

My uncle used to work at a beef plant in Nebraska. He said they'd save all the trimmings from like 500 steaks a day just for the grind.
