Just learned from a USDA fact sheet that a single beef carcass can yield over 800 different meat and by-product items, not just steaks and roasts.
I found that stat while looking up rendering info online, and it really makes you appreciate the whole animal process more, doesn't it?

That's a wild number to think about. It really shows how little waste there is in the whole system. Honestly, learning stuff like that makes me way less picky at the store now. If a cut looks a little weird or has a weird name, I just buy it anyway. They figured out a use for basically everything, so it feels right to not be too fussy. Saves money, too.

But if they use everything anyway, why should we buy the weird cuts? They'll just sell the good ones for more.

Yeah but grantp28 has a point. If we all buy the weird cuts, they'll just raise prices on those too. Then nothing really changes.
