Spent $60 on a new boning knife and it was the worst impulse buy I ever made

I grabbed a cheap flexible boning knife from a supply shop last month for $60, thinking it would help with detailed trimming. First day using it on a pork shoulder, the handle started slipping in my grip after 10 minutes. The blade lost its edge so fast I had to stop and resharpen twice during that shift. Has anyone else been burned by a budget knife that looked good on the shelf?

Yeah I used to be one of those people who thought all knives are basically the same and you're just paying for a name. Then I picked up a cheaper boning knife from a restaurant supply place and had the exact same experience you did. The handle on mine started to feel greasy and slippery after trimming a couple of chickens, and the blade felt like it was dulling on the first pass through the skin. What finally got me was when I tried to do a precise cut around a tendon and the thing just skipped and slid across the meat. That was the moment I stopped thinking price didn't matter. Did you end up tossing yours or do you keep it around for rough work?

Felt that story in my bones, man. I kept my crappy knife around for opening boxes and cutting zip ties so it at least felt like it earned its keep. Figured it hurt a little less that way, you know?

Nah man, I get it completely. That feeling of trying to make something work just because you already paid for it, even when it's fighting you the whole way. I think we've all been there with at least one piece of gear that just never quite did the job right.
