Spent $80 on a new boning knife and it was a total waste
I got talked into buying a fancy 'super flexible' boning knife for breaking down pork shoulders. The thing bent way too much and just would not hold an edge, even after a careful sharpening. I went back to my old, stiffer Victorinox after just two weeks and it felt like coming home. Has anyone else had a bad run with a tool that sounded good on paper?

Yeah, that "super flexible" tag is a trap for bigger jobs. I learned the hard way with a boning knife that flopped around on a beef rib roast. You need a blade with some backbone, like your Victorinox, to follow the bone without twisting. A little flex is okay, but too much and you lose all control.
