Spent $90 on a good boning knife and it paid for itself in a week
I used to get by with those cheap $20 sets from the restaurant supply store. Figured a knife is a knife right? Then I nicked myself three times in one day trying to trim silverskin off some top rounds. Buddy at the shop said to try a Victorinox Fibrox. Picked one up for 90 bucks at a local supplier over on Elm Street. First day using it I cut my trim time by almost half. No slipping, cleaner cuts, less waste. Has anyone else had a cheap knife fail on them at a bad moment?

Have you ever considered that a dull knife is actually more dangerous than a sharp one? Because you end up forcing it and losing control, which leads to slips and cuts.

My dad cut himself pretty bad with a dull knife about two years ago, he was trying to slice a butternut squash and the thing just slid right off the skin and straight into his thumb. He needed like five stitches and the whole time the doctor was like yeah this happens all the time with dull blades because people push harder and lose control. I actually switched over to using a cheap ceramic knife after that just because it stays sharp longer without me having to remember to sharpen it all the time. Its scary how much force you have to put behind a dull knife to get it to do anything, and once it slips there is no stopping it.
