Switched my casing supplier 6 months ago after 4 years with the same guy, and my sausage links keep blowing out on the grill
Back in March I had to pick between staying with my old casing guy in Modesto or trying the outfit my buddy uses out of Stockton. I went with the new one because he was 12 cents a pound cheaper and could deliver on Tuesdays instead of Fridays. Now I'm getting blowouts on maybe 1 in 5 links, always right at the twist, and my regular customers at the Saturday market have started pointing it out. I'm thinking it's the casing thickness, but I haven't ruled out my stuffer pressure either. Any of you run into this after a switch, and how did you figure out if it was the casing or your own setup?
