Switched my pork supplier in May and the marbling went downhill in 4 months
I used to get all my hogs from a farm out near Hastings, and the loins had that nice fat cap you could trim to whatever you wanted. Switched to a bigger outfit in June because the price per pound dropped about 40 cents, and by October the same cut was coming in way leaner, almost no cap at all. Is that just seasonal feed stuff or did I trade quality for cheap? Curious if anyone else has gone back to a smaller farm after a change like this.
