That apprentice who questioned my trimming method really got me thinking
Had a kid fresh out of trade school tell me I was leaving too much silverskin on the striploins last Wednesday. Watched him do one his way and it took him twice as long but the yield was better. Makes me wonder how many shortcuts I've been taking that actually cost the shop money over a month.

Hate it when the greenhorn makes you look bad by actually knowing what they're doing. Guess we're both learning something that day.

Man that hits close to home. It's humbling when someone half your age shows you a better way to do something you thought you had figured out years ago. I've had that same gut punch feeling watching a kid tweak my technique and prove me wrong. But honestly, I try to remind myself that learning never stops, even if it stings a little at first. It's better to catch those mistakes now than keep losing money over time because of pride.
