The loin trim difference after I switched to a 10-inch scimitar

Used a 6-inch boning knife for years on pork loins, took me 4 minutes per loin and left silver skin patches. Swapped to a 10-inch scimitar last month, now it's 90 seconds and clean as a whistle. Anyone else notice that big a jump from blade length, or was I just using the wrong tool this whole time?

The jump in speed might be more about the blade shape than the length. A scimitar is curved for rocking cuts, so it follows the contour of the loin better than a straight boning knife. But 90 seconds still feels fast to me, I'd guess you also changed your technique without noticing. Your mileage may vary, but I've seen guys do clean loins in two minutes with a stiff six inch, it's all about where you start the cut.
