The old timer at the auction who fixed my break test
I was at the livestock auction in Franklin last month, buying a few culls. This 70 year old butcher watched me do the break test on a chuck and shook his head. He showed me how to feel for the seam fat and sinew by touch instead of sight, which I still use today. Has anyone else picked up a trick like that from someone older?
That old butcher’s trick is exactly the kind of thing you can’t learn from a video. Man, I used to think the break test was all about looking at the marbling and the color, like judging a steak in a fancy grocery store. Then an old guy at my local sale barn showed me the same thing, running his thumb along the seam fat like he was reading braille. Made me realize sight can lie to you, especially under bad lighting or when the meat’s been sitting out. Now I always close my eyes for a second and feel for that sinew before I bid. It’s humbling to know a 70 year old can still teach a young buck like me something that saves money every single week.
