Thought I knew how to sharpen until I ruined a $60 knife

Honestly I used to just run my knives through a pull through sharpener and call it a day. Last Tuesday I was breaking down a whole pork shoulder at the shop in Denver and my blade kept catching on the silver skin. I thought it was just me being rough but my coworker grabbed the knife and showed me the edge was actually rolled over from bad sharpening. He sat me down with a whetstone and had me reprofile the whole thing took like 45 minutes. Now I feel stupid for all those years thinking pull throughs were fine. Has anyone else had to unlearn a bad habit that you thought was normal? I'm still figuring out the angle consistency on stones.

Yeah @charles442 I did the same thing just keep the stone soaked and go slow till it feels right.

My uncle taught me to sharpen with a pull through and I did it for years before I realized I was just making the edge worse every time. It's funny how we learn shortcuts early and then have to unlearn them later in life.
