Unpopular opinion: a $3 thermometer taught me more about my walk-in cooler than any fancy gauge
I stuck a cheap dial thermometer next to my aging digital probe last week at the shop and the $3 one read the same within a degree, which got me wondering how much of what we fuss over on the kill floor actually matters in the dark.
