Used to break down primals by feel, now I actually measure everything
For 5 years I just went by touch and eye on my beef primals, but after one bad batch of ribeyes last October I bought a scale and calipers. Any of you guys track exact trim weights or am I overthinking this?

Measuring everything changed my game completely. Thirty bucks on a decent digital scale saved me from another disaster batch like yours. I track ribeye cap to eye ratio now, weirdly satisfying. Those calipers really show how much yield you're actually working with.
