My turnaround on food service jobs after a decade in HVAC

For years, I looked down on restaurant work as unsteady. Then I met a food truck owner who showed me how he runs things. He makes good money and enjoys his work, unlike some in trades. I'm now encouraging my son to check out cooking schools. Don't let old ideas stop you from a good career.

Wait, you're actually telling your kid to go to cooking school now? That's wild after doing HVAC that long. Most trade guys I know would push their sons right into the same field. The food truck guy must have really changed your mind if you're steering him toward kitchens instead of construction sites.

That food truck owner must have shown you something really specific to flip your view like that. What was the main thing about how he runs his business that proved it wasn't just unsteady work? Was it his schedule, the actual money he took home, or how he handled slow seasons?

Honestly! He showed me his books from the last three years, and the money was way more steady than I ever guessed. The real kicker was how he plans for slow times by booking private events and shifting his location ahead of time. It wasn't just luck, he had a system for everything, even slow seasons. Seeing that kind of control over the work changed my whole view on it being unsteady.
