That week I ate beans and rice for 5 days straight and loved it
Back in 2019 I was between jobs in Phoenix and had exactly 20 bucks for groceries for the whole week. I got a big bag of dried pinto beans, a sack of rice, some onions and a jar of cheap salsa and ate the same bowl every night for 5 days. Has anyone else had a time where a super simple cheap meal actually turned out way better than you expected?

Oh man, that sounds incredible honestly. I had a similar thing years ago when I was in my early twenties and flat broke in a tiny apartment with nothing but a hot plate. I survived for a whole week on just black beans, white rice, and this super spicy canned diced tomatoes with green chiles mixed in. It was so simple but every single night I looked forward to that bowl, there was something really comforting about knowing exactly what you were gonna get. The beans got creamier by day three when they'd been sitting in the fridge soaking up all that tomato juice too. Sometimes the most basic stuff hits different when you don't have any other options.

Nothing like a humble bowl of beans and rice to remind you that life was simpler when you had no money and even fewer options. I swear the law of poverty dictates that basic food tastes like a five star meal the closer you get to payday. At least your pantry prison sentence came with a side of spicy tomatoes.

I gotta push back on the "five star meal" thing a bit lol. I've been there eating beans and rice out of necessity and honestly it just reminded me of how crappy my situation was. The taste was never the highlight for me, just a reminder I couldn't afford anything better.
